You'd be surprised how hard it is to find the right noodles for a dish. Generally buckwheat and rice based noodles are the options you should be going for. The wheat based noodles are certainly not a good choice. And most "egg" noodles contain wheat too.
These noodles are great for a wide range of dishes and are quick to make. Just put them in boiling water for roughly 6-7 minutes.
